Gingerbread Cookies & Refined Sugar Free Royal Icing

Christmas is almost here! 

In this video, learn how to make perfect gingerbread cookies and their refined sugar-free royal icing.

This gingerbread cookie recipe is not the traditional one you are used to making every year! Indeed, instead of using refined sugar (brown sugar, molasses, and powdered sugar), chef Ludivine decided to use natural sweeteners. You can find coconut sugar as a substitute for brown sugar and maple syrup as a substitute for molasses in this gingerbread cookie recipe. You can also find powdered monk fruit sweetener as a substitute for powdered sugar in the royal icing.

On top of these changes, we also cut down the amount of sugar in this recipe without hurting the incredible flavors of these Christmas cookies. All these changes were made only to share with our community the healthiest gingerbread cookies!

Gingerbread Cookies

4 cups (575g) - Flour

1 tbsp (8g) - Cinnamon

½ tsp (1.5g) - Clove

1 tbsp (5g) - Ginger

½ - Fresh nutmeg 

½ tsp (2g) - Baking powder

1 tsp (6g) - Baking soda

1 tsp (3g) - Sea salt flakes

1 - Egg

6 oz (170g) - Butter, room temperature

4 oz (113g) - Coconut sugar

5 oz (141g) - Maple syrup


Royal Icing

1 cup (100g) - Monkfruit sweetener

1 - Egg white

½ tsp (2g) - Vanilla extract

We advise that you prepare all the above ingredients before starting.

You will typically need: a scale, measuring cups, mixing bowls.


Gingerbread Cookies

1 - To a large mixing bowl, add the flour, dry spices, grated nutmeg, baking powder, and baking soda. Gently whisk together to fully combine and set aside.

Tip: We store our ingredients in these mixing bowls and mini glass bowls from Duralex while cooking. We love Duralex for their quality products and low prices!

2 - Using a stand mixer with the beater attachment, cream together the butter and coconut sugar until light and smooth.

3 - Crack in the egg and continue to beat for another 4 minutes until nice and fluffy.

4 - Add in half of the flour mixture and turn on the mixer to medium speed to slowly combine. 

5 - With the mixer still on, pour in the maple syrup. Once the flour and maple syrup is fully combined into the mix, stop the mixer and add in the rest of the flour mix. On medium speed, beat the flour into the mix until fully combined and a sticky homogenous dough is reached. 

6 - Scrap the dough out of the mixer, form it into a ball and place it between two sheets of parchment paper. Then, roll it out ⅓ inch (0.8cm) thick using a rolling pin. With the dough still between the sheets, move it onto a baking tray.

7 - Peel off the top layer of parchment paper and, using these cute Christmas cookie cutter shapes, cut out your cookies. Without removing the shapes, transfer the whole tray to the fridge to chill for 25 minutes. 

8 - Preheat your oven to 365°F (185°C).

9 - Once chilled, remove the excess dough from around the cookies. This dough can be used to make more cookies. Simply repeat steps 6 and 7.

10 - Next, evenly spread your cookies over the baking tray and bake in a 365℉ (185℃) oven for about 15 minutes. 

11 - Once baked, transfer the cookies to a cooling rack using a spatula, and allow them to cool completely before icing. 

 

Royal Icing

1 - Make an icing bag by folding a piece of parchment into a cone.

Tip: We are showing you how here.

2 - In a large bowl, whisk together the monkfruit sweetener, egg white, and vanilla extract until well combined. Then, with your paper cone propped up in a glass, add the icing to the inside of the cone before closing and folding over the top.  

3 - With the cone of icing, decorate your cookies with royal icing with your desired patterns. You can also use the royal icing to stick on candies and other decorations. 

4 - Let the icing dry completely before eating or storing. 

5 - Enjoy!
