If you are a pancake lover and looking for a healthy recipe, you came to the right place! Today, we are sharing with you this delicious whole-wheat banana pancake recipe without buttermilk.

At How To Cuisine, we love to find ways to make recipes healthier and still ensure deliciousness in the process. So for this pancake recipe, we used banana as a base for the flavor but also as a substitute for the butter. In addition, instead of using buttermilk, we used regular milk. However, you can also choose to use plant-based milk to make these pancakes dairy-free.

Whole Wheat Banana Pancakes

1½ cups (200g) - Whole-wheat flour

2 tsp (10g) - Baking powder

1 tsp (5g) - Baking soda 

2 - Bananas

2 tbsp (30g) - Coconut sugar

1 - Egg

1¼ cups (310g) - Milk

We advise that you prepare all the above ingredients before starting.

You will typically need: a scale, measuring cups, mixing bowls.


Whole Wheat Banana Pancakes

1 - To a large mixing bowl, whisk together the whole wheat flour, baking soda, and baking powder before setting aside. 

Tip: We store our ingredients in these mixing bowls and mini glass bowls from Duralex while cooking. We love Duralex for their quality products and low prices!

2 - Peel the bananas, add them to another bowl, and mash them using a potato masher.

3 - Next, add the coconut sugar and the egg to the mashed bananas and whisk until well combined. 

4 - Pour the milk into the banana mixture and whisk until well combined.

5 - Finally, add the dry ingredients to the previous mixture and stir until just combined with a silicone spatula

6 - To cook the pancakes, preheat a large cast-iron skillet over medium heat. Then, add butter spread to the skillet.

7 - Turn the heat down to medium-low and pour about ½ cup of batter into the middle of the skillet using a measuring cup.

8 - Cook the pancake for about 2 minutes, allowing the batter to rise slightly and bubbles to form on the surface. Then, gently flip it with a turner spatula and allow it to cook for another 2 minutes on the other side. Remove the pancake from the pan and keep it warm under a tea towel while you make the rest.

9 - Repeat steps 7 & 8 until you have used up all the batter.

10 - To serve, stack 3 or 4 pancakes on top of each other. Add some sliced bananas to the top of the stack and drizzle some maple syrup over it all.

11 - Enjoy!
