Blueberry Scones

1 cup (125g) - Flour

1 tsp (4g) - Baking powder

½ tsp (3g) - Baking soda

6 oz (180g) - Butter

⅓ cup (30g) - Light brown sugar

1 - Egg 

3 tsp (13g) - Vanilla paste

1 tbsp (15g) - Heavy cream

To taste - Blueberries

 

Blueberry Whipped Cream

1 ½ cups (360g) - Heavy cream

⅓ cup (38g) - Powdered sugar

¼ cup (41g) -  Blueberries

1 tsp (4g) - Vanilla extract

We advise that you prepare all the above ingredients before starting.

You will typically need: a scale, measuring cups, and mixing bowls.

 

Blueberry Scones

1 - Preheat your oven to 375°F (190°C).

2 - Place the block of frozen butter on a plate and grate it entirely with a box grater. Chill it for 20 minutes.     

3 - In a mixing bowl, add the flour, the baking powder, and the baking soda. Stir with a whisk until well combined. Add the frozen butter with the help of a spatula, and mix it all together with your hands.   

4 - In another mixing bowl, add the brown sugar, 1 egg, and the vanilla paste. Mix thoroughly until homogeneous. Pour the heavy cream into the mix.

6 - Pour the liquid mixture (step 4) into the dry mixture (step 3) and mix with a spatula until a dough is formed. Knead it by hand into a block first and then make it a flat rectangle about ½ inch thick. You can add more flour onto the dough if it is too sticky. 

5 - Arrange the blueberries into the dough, forming several parallel straight lines covering the entire surface. Roll the dough on itself after each set of 3 lines. Roll the dough up into the shape of a rolling pin. Cut it into 10 slices. Sabatier knives are excellent French blades we recommend for professional and home cooks. 

6 - Spread some butter into small loaf pans (to avoid the scones from sticking to the mold during baking), and place 3 slices in each. 

7 - Bake at 375°F (190°C) for 15 minutes.

 

Blueberry Whipped Cream

1 - Blend the blueberries in a blender so it turns into a purée. Vitamix blenders are by far the best we have ever owned: Vitamix Explorian, Vitamix Pro Series 750.

2 - In a stand mixer bowl, add the powdered sugar and the heavy cream and mix them until the mixture is homogeneous and has gained some volume. Add the vanilla extract and the blueberry purée. Mix it again until a nice pink color appears. The KitchenAid Artisan Design Series and the KitchenAid Professional 600 Series are superstars among stand mixers and will look amazing in your kitchen!

3 - Pour the whipped cream into a piping bag with a tip on, and decorate the scones like so.
