We advise that you prepare all the above ingredients before starting.

You will typically need: a scale, measuring cups, and mixing bowls.

Hash Browns

1 - In a large mixing bowl, combine the bread crumbs, Parmesan, flour, thyme, and stir lightly using a spoon (or a whisk).

2 - Peel one large potato and grate it. Here we are using the excellent Breville Sous Chef food processor which will grate your potato in a few seconds. You can also use a regular box grater

3 - Fill up a large mixing bowl with cold water, and soak the grated potato for 10 minutes. It will allow you to remove a good amount of the potato starch and will make your hash browns extra crispy and crunchy.

4 - After 10 minutes, strain the potato from the water. Then, place a kitchen towel in a mixing bowl and put all the drained grated potato in it. Next, close the kitchen towel over the potato and squeeze as hard as you can to extract the rest of the water out of your potato as shown here.

5 - Once squeezed, add the potato to your crumb mix and combine everything by hand.

6 - Incorporate the eggs one at a time and mix using a spoon until you obtain a homogeneous mixture.

7 - Finally, shape your hash browns using a cookie cutter or by hand. You simply have to fill your cookie cutter as if it were a mold and press the hash brown inside evenly, before gently removing the cookie cutter.

At this point, you can cook them right away or you can freeze them for 1 hour. It will help maintain their shape for when you cook them, especially if you have done a customized shape.

8 - Fill a saucepan with oil and preheat it at 345°F (170°C). When the oil is hot, place the hash browns inside and cook them on both sides for about 3 to 5 minutes. You may use tongs or a spatula to manipulate them. Be aware that depending on the size of your hash browns and if they are frozen or fresh, the cooking time may need to be adjusted.

9 - Enjoy!
