Easy Avocado Toast

Whether it is for breakfast, lunch, or even dinner, you can never go wrong with avocado toast.

To make our healthy avocado toast, we used our whole wheat sourdough bread recipe, which is full of good nutrients and has an extraordinary flavor.

This avocado toast is our go-to recipe whenever we want to have a great breakfast or snack but don’t really have time to make something fancy. The whole wheat bread, scrambled eggs, avocado, and feta combo is the best and easiest you can find!

Bon appétit!

You will typically need: a scale, measuring cups, mixing bowls.

Avocado Toast

1 - Preheat your oven to 350°F (175°C).

2 - Brush the bread slices with olive oil using a pastry brush (boar/silicone)

Tip: Check out our whole wheat sourdough bread recipe.

3 - Place the bread on a baking tray lined with a baking mat, and bake it at 350°F (175°C) for about 15 minutes.

4 - Meanwhile, crack 2 eggs into a mixing bowl and beat them using a whisk (or a fork) until well combined.

5 - Melt a nut of butter in a cast-iron skillet over medium-low heat by spreading it all over the surface, using a silicone spatula

6 - Pour the eggs into the skillet and cook them while continuously mixing with a silicone spatula, until the scrambled eggs are fully cooked. Then, set those aside in a separate container.

7 - Cut the avocado in half lengthwise, then in quarters, using a sharp knife. Then, remove the pit.

Tip: We recommend you use a paring knife for this task. Sabatier knives are excellent French blades we recommend for professional and home cooks.

8 - Gently peel the avocado skin with your hands. It should come off very easily.

9 - Slice the avocado quarters lengthwise on a cutting board.

Tip: We love this reversible cutting board with integrated handgrips from John Boos.

10 - Arrange the scrambled eggs on the bread slices. Then, add the avocado slices in a pretty manner on top of the eggs (½ avocado per slice of bread).

11 - Squeeze half a lime over the avocado.

12 - Lastly, sprinkle some feta, fresh scallions, and sea salt on top.

Tip: Sea salt is an exceptional addition to any dish and adds an incredible texture. Here are two different sizes we recommend: sea salt 8.5 oz (240g), and sea salt 3.1 lb (1.4kg).

13 - Enjoy!
