Crispy Sweet Potato Fries With Homemade Aioli (Mustard-Free)

We have all tried to make homemade sweet potato fries, but they often end up soggy and far from crispy.
After many tests, we finally found the perfect formula to allow you to get perfectly crispy sweet potato fries at home! 
Also, discover our homemade mustard-free aioli that will perfectly accompany your freshly baked fries.

Homemade Aioli (Mustard-Free)

1 - Egg yolk

1 tbsp (15ml) - White vinegar

¼ cup (50ml) - Avocado oil

¼ cup (50ml) - Olive oil

2 pinches - Himalayan salt

1 - Garlic clove

 

Crispy Sweet Potato Fries

2 - Sweet potatoes 

2 pinches -  Himalayan salt

¼ cup (60ml) - White vinegar

1 - Egg white

1 tbsp (15ml) - Water

2 tbsp (20g) - Corn starch

½ tsp (0.5g) - Paprika

We advise that you prepare all the above ingredients before starting.

You will typically need: a scale, measuring cups, mixing bowls.

 

Homemade Aioli (Mustard-Free)

1 - Add the egg yolk and white vinegar to a large bowl and whisk vigorously until foamy.

Tip: We store our ingredients in these mixing bowls and mini glass bowls from Duralex while cooking. We love Duralex for their quality products and low prices!

2 - While continuously whisking, pour half of the avocado oil and keep whisking until the mixture starts to thicken. Then, pour the second half of the avocado oil and whisk again for a few more minutes.

3 - Pour half of the olive oil and keep whisking until the mixture has thickened a little more. Then, pour the second half and whisk again for a few more minutes until the mixture turns into a thick cream.

4 - Add 2 pinches of Himalayan salt to the aioli and stir to combine using a silicone spatula.

5 - Crush and peel the garlic clove. Then, finely mince the garlic before incorporating it into the aioli.

6 - Transfer the aioli into a glass jar and refrigerate it for at least 2 hours before serving.

 

Crispy Sweet Potato Fries

1 - Cut the edges of the sweet potatoes and peel them using a peeler. Then, cut them into even-sized fries, about ¾ inch (2 cm) thick.

2 - Add water to a large pot (or like us a cast iron dutch oven) and add in the salt as well as the white vinegar. Then, bring everything to a boil.

3 - Add the fries to the boiling water and cook them for 8 minutes.

4 - After 8 minutes, turn off the heat. Place a strainer over a bowl and gently remove the fries from the water using kitchen tongs.

5 - Preheat your oven to 400°F (205°C).

6 - In another large mixing bowl, separate the egg and add the white to the bowl. Place the yolk into a small food container and place it back into the fridge for another recipe.

7 - Add the water and the cornstarch to the white and whisk everything together until well combined.

8 - Add the fries to the egg mixture and mix them using the kitchen tongs (or a silicone spatula), making sure they are all well coated.

9 - Place a cooling rack over a baking tray and grease it with baking spray. Then, place the fries on the cooling rack, making sure to leave a little bit of space in between each of them. Bake them at 400°F (205°C) for 20 minutes.

10 - Remove the fries from the oven, flip them, drizzle some extra olive oil, and place them back in the oven to bake for another 20 minutes at 400°F (205°C).

11 - Once cooked, add them to a clean bowl and sprinkle some salt and paprika powder. Mix them until well combined. 

12 - Serve them with the homemade aioli.

13 - Enjoy!
