In this episode, we are sharing our best healthy avocado soup recipe. Full of nutrients, this creamy avocado soup is among the best avocado recipes we tried and is perfect for a quick lunch, or as a starter during a more formal dinner.

Avocado is the fruit of the avocado tree, scientifically known as Persea Americana.
This fruit is prized for its high nutrient value and is added to various dishes due to its good flavor and rich texture.

These days, avocado has become an incredibly popular food among health-conscious individuals and is often referred to as a superfood.
Avocados are very nutritious and contain a wide variety of nutrients, including 20 different vitamins and minerals: Vitamin K, Folate, Vitamin C, Potassium, Vitamin B5, Vitamin B6, and Vitamin E. It also contains small amounts of magnesium, manganese, copper, iron, zinc, phosphorus, and vitamins A, B1, B2, and B3.
Also, avocados do not contain any cholesterol or sodium and are low in saturated fat.

Avocado Soup

½ - Cucumber

1 - Garlic clove

2 - Lemons

½ - Leek

¾ cup (180ml) - Soy milk

1½ cups (360ml) - Water

½ oz (14g) - Parsley

2 - Avocados

1 pinch - Himalayan salt

We advise that you prepare all the above ingredients before starting.

You will typically need: a scale, measuring cups, mixing bowls.


Avocado Soup

1 - Chop the cucumber with a sharp knife.

Tip: We recommend you use a Santoku knife for this task. We love Japanese knives and recommend this quality kit from GLOBAL for home and professional chefs.

2 - Crush the garlic cloves on the cutting board using your knife. Then, peel the garlic skin off.

Tip: We love this reversible cutting board with integrated handgrips from John Boos.

3 - Cut the lemons in half, squeeze the juice out using a manual juicer (or a lemon squeezer) and set it aside.

4 - Finely slice the leek with a sharp knife and set it aside into a bowl.

5 - Preheat a skillet on medium heat and drizzle about 1 tablespoon of olive oil over it.

6 - Add the leek to the skillet and cook for about 5 minutes (or until the leek is fully cooked). Mix from time to time using a spatula (wooden/silicone) to prevent the leek from sticking to the pan.

7 - Combine all the ingredients into a blender and blend them until smooth.

8 - Pour the avocado soup into a plate (or a food container) and refrigerate it for at least 20 minutes before tasting.

9 - Delicately place some fresh parsley over the soup.

Tip: Here, we are using tweezer tongs for the pro touch.
