These tasty energy balls will last you up to 2 weeks if stored properly. We recommend you store them in a glass food container in the fridge.

Chocolate Coconut Energy Balls

1 cup (138g) - Dates

½ cup (80g) - Almonds

1 cup (80g) - Shredded coconut

⅓ cup (30g) - Cocoa powder

1 tbsp (6g) - Collagen powder

1 tbsp (17g) - Coconut oil

We advise that you prepare all the above ingredients before starting.

You will typically need: a scale, measuring cups, mixing bowls.

 

Chocolate Coconut Energy Balls

1 - Combine the almonds and dates in a food processor and blend until finely ground.

Tip: Here, we are using the excellent Breville Sous Chef food processor.

2 - Add the remaining ingredients to the food processor and blend until a dough forms.

3 - Portion the energy balls with a small ice cream scoop and place the dough in your hand. Then, shape it into balls and roll them in shredded coconut until the entire surface is coated with coconut. Repeat this process until you used all the dough.

4 - Place the energy balls on a plate and transfer them into the refrigerator for about 15 minutes.

5 - Enjoy!
