Very fluffy and just sweet enough, with a delicate chocolate flavor and an intense homemade chocolate sauce, these pancakes will revolutionize your mornings!

The particularity of this pancake batter is that it contains a little bit of starter.

It will give a delicious sour flavor to your pancakes, and the best part of this tasty recipe is that you can keep the pancakes batter for 3 days in the fridge!

Chocolate Pancakes

2½ cups (360g) - Flour

1 tsp (6g) - Baking soda 

1 tsp (6g) - Baking powder

2 tbsp (13g) - Cocoa powder

3 tbsp (50g) - Sugar

2½ cups (565ml) - Buttermilk

4 oz (113g) - Butter

2 - Eggs

½ cup (135g) - Starter (optional)

 

Chocolate Sauce

3 oz (90g) - Dark chocolate

4½ oz (130g) - Whole milk

We advise that you prepare all the above ingredients before starting.

You will typically need: a scale, measuring cups, mixing bowls.

 

Chocolate Pancakes

1 - Combine the flour, baking powder, baking soda, cocoa powder, and sugar in a large mixing bowl and mix everything together using a whisk. Then, set aside.

2 - Melt the butter in the microwave for about 1 minute (or in a saucepan over low heat).

3 - Separate the egg yolks from the egg whites like so.

4 - Combine the buttermilk, melted butter, egg yolks, and starter (optional) in a separate mixing bowl. Then, whisk everything together until well combined.

5 - Pour the liquid mix over the flour mix, also called dry ingredients. Next, slowly incorporate everything together using a spatula

6 - Finally, add the egg whites into the pancake batter and gently mix with your spatula, just enough to incorporate the egg whites. You don't want to over-mix your batter which could make your pancakes less fluffy. Then, rest for 30 minutes, and meanwhile, start your chocolate sauce.

7 - After you have made the chocolate sauce, it is time to cook the pancakes. Place a cast iron skillet over medium-low heat and once the skillet is hot, grease it with a nut of butter. To get large pancakes, we used ⅔ of a measuring cup, however, feel free to use the size you prefer. Let it cook for about 3 minutes and flip the pancakes when small bubbles start to appear. Cook the other side for another minute.

8 - Stack as many pancakes as you would like on a plate and finish the dressing with the chocolate sauce and the fresh fruits of your choice. 

 

Chocolate Sauce

1 - Combine the milk and the dark chocolate in a saucepan (or a saucier pan) and slowly melt over low heat while mixing with a spatula until the chocolate sauce is smooth and shiny.

2 - Pour the chocolate sauce over your cooked chocolate pancakes before tasting.

3 - Enjoy!
