Today, we are so happy to share with you this healthy pita sandwich recipe! If you are making pita sandwiches at home, we recommend you make your own pita bread. Check out our delicious and easy pita bread recipe.

Easy to make and with so much flavor, these tasty pita sandwiches are stuffed with a delicious salad mix, fresh red bell pepper, avocado, caramelized onions, feta, and pesto chicken.

These delicious pesto chicken pita pockets can be served hot or cold and grilled on the skillet or in an electric griddler. Either way, they are so delicious!

Chicken Pita Sandwich

3.5 oz (100g) - Salad mix

1 - Red bell pepper

1 - Tomato

1 - Avocado

1 - Onion

3 - Garlic cloves

3 - Chicken breast

2.6 oz (75g) - Pesto 

2.6 oz (75g) - Feta 

To taste - Dry cure

Pita bread

We advise that you prepare all the above ingredients before starting.

You will typically need: a scale, measuring cups, mixing bowls.


Chicken Pita Sandwich

1 - Roughly chop the salad mix and transfer to a mixing bowl.

2 - Mince the red bell pepper and the tomato. Then, add them to the mixing bowl.

3 - Cut the other avocado in half lengthwise and twist one half to open it. To remove the pit, gently press the opposite side to push it out. Dice the avocado directly inside the skin. Scoop the flesh and add it to the mixing bowl using a spoon.

4 - Mix everything together using a kitchen tong and set aside.

5 - Peel and slice the onions and the garlic clove and set them aside.

6 - Melt 1 tbsp of butter into a cast-iron skillet. When the butter starts to bubble, add the chicken breasts and let them cook for about 4 minutes. Season the top of the chicken and flip it after 4 minutes. Let cook for another 4 minutes.

7 - Place the chicken on the cutting board. Next, add the sliced onion to the skillet, give it a mix using a silicone spatula, and cook for about 5 minutes. Make sure to mix from time to time to prevent the onion from sticking to the bottom of the skillet. 

8 - Mix in the sliced garlic and cook for another 5 minutes. Meanwhile, chop the cooked chicken and return it to the skillet. Stir to combine and remove from the heat. 

9 - Add the pesto and the feta to the skillet and stir until well combined.

10 - Cut the pita bread in half and garnish it with the salad mix and the pesto chicken. 

11 - Enjoy!
